Bossuet is outstanding. Like really freaking serious juice. The nose is deeply perfumed with violets, vanilla, cocoa, and warm cherry pie filling. The palate keeps up the momentum with a broad, mouthfilling texture that deftly straddles the line between rustic and modern. Excellent layers of mocha, roasted plums, and blueberry jam sit astride hints of fresh strawberries, scorched earth, and cigar box to deliver a palate that evolves with each passing swirl and sniff. Pairing it with a perfectly medium rare ribeye will yield outstanding results today and even more impact as the wine matures over the next 3 or 4 years. In any case, drinking it is the sort of everyday luxury that we all deserve a bit more of.Food Pairing:
We don’t eat steak all that often at my house but when we do I always go to the wine cellar to look for an appropriate bottle to pair with it. I’ve got all sorts of foolishness down there from every important wine region on the globe. But, when it comes to a simply prepared steak and a baked potato, I always seem to open Bordeaux. So, this weekend your task is to go out and find a really fantastic piece of steak and prepare it simply with a minimum of spices. Do a simple but well made side dish and open a bottle or three of the 2015 Bossuet to go with it. Oh boy! I’m getting excited just thinking about that kind of food and wine!
