Wines of Substance Columbia Valley Cabernet Sauvignon 2016

Every once in a great while an inexpensive Red is truly profound. The 2016 Substance Cabernet from acclaimed vintner Charles Smith of Washington State is just such a wine. You probably already know that Washington State is turning out some incredible vales but you may not have heard about the killer juice that Charles Smith has been making out there. Take a moment to acquaint yourself with the 2016 Wines of Substance Cab, an entry level cuvee for Smith if you can believe that, and you’ll instantly become entranced by it. The nose is freaking outstanding with blockbuster scents of wood smoke, vanilla, crushed thyme, walnut liqueur, toasted oak, and graham cracker pie crust. As good as the nose is, the palate is even better. It is firm and tannic with a honest to goodness Cabernet style about it. Really bright red cherries and raspberry puree kick things off. Then, on the finish, lush blueberry jam, tar, tobacco, and crushed granite all make lingering appearances framed up by well balanced acidity and ripe tannin. If there’s a fault here, it’s that the wine is is a bit young. Decanting will help soften the edges for sure, but this wine should really start to blossom after 2 or 3 years in the cellar and should drink well for a decade or so if you have the patience to forget about it that long.
Food Pairing:
Cabernet is planted all over the world because it grows well in a variety of climates and turns out delicious and versatile red wine. This week’s special is exceptionally well built Cabernet. So you can pair it up confidently with a ton of different meals. This one has a distinctly smoky edge on the nose that makes me think it would be a tremendous pairing for traditional Texas bbq brisket. When brisket is done right it can really be ethereal. And when Cab is done right it can be pretty special also. So, I suggest a plate of thinly sliced brisket with all the classic trimmings accompanied by a glass (or three) of this outstanding Columbia Valley Red, the 2016 Wines of Substance Cabernet.
