Rotari Flavio Chardonnay Trento Brut 2007

As soon as we tasted the 2007 Rotari Flavio we were in love. So much so, in fact, that we debated even mentioning it to you on this email because we knew that doing so would encourage you to buy it and then we'd have less for ourselves. But, you know, we love you and we want you to be happy. So here it is. 100% Chardonnay fermented in the traditional Champagne method and aged for more than 5 years on the lees before being disgorged. Then aged for an additional 5 years in the bottle before making its way to your bar. It is a creamy, luxurious sparkler that will impress with it's length, richness, and complexity. To drink Champagne of this quality would cost $100 a bottle. But be warned, this one will sell out and it won't be back. So, do not delay. Call and get your bottles today!
Food Pairing:
Because of the extended aging that the 2007 Rotari Flavio has seen it will be especially good when paired with a dish that contains creamy or nutty elements. Chris and I were just musing about what an excellent pairing it would be for a classic corn and crab bisque. It would also be right at home alongside desert, particularly a desert like baked apple tart brushed with apricot preserved and topped with toasted slivered almonds. Heck, this bottle is so well made that it would rock and roll alongside a classic plate of surf and turf since it is delicate enough not to overpower the seafood and zesty enough to cut right through the fat of the steak.
