Unio Cellars Convey Priorat 2016

The tiny D.O. or Priorat in Northern Spain is a mecca for wine connoisseurs because its ancient vines were spared the devastation of phylloxera due to the area’s extremely arid climate and incredibly poor soils. Those old, gnarly vines are capable of producing wine grapes that offer more character and style than virtually anywhere else in the world and it shows in every facet of our “Wine of the Week”, the 2016 Unio Cellars Convey Priorat. This layered Red is composed of the classic Priorat blend of Garnacha and Carinena and drawn from the estate’s stocks of ancient vines grown in harsh black slate soils. The nose of this stylish blend is awash with perfumed notes of rose, Oolong tea, cherry cordial, and warm berry preserves. Beyond those primary aromas sits a layer of impressive tertiary aromatics ranging from grilled bread to crushed slate, black olive, and a touch of Rhone-esque garrigue. What a rare treat to see such an engaging nose in such an inexpensive Red! And that’s only the tip of the iceberg! The palate is imbued with a real sense of style too. It offers a firmly tannic frame upon which impressive notes of crushed cherries, macerated strawberries, over-ripe plums, and a bit of blueberry cobbler are hung. This is a value within the Unio Cellars line and, as such, it wasn’t meant to age for a long time. That said, this bottle is unquestionably on the evolutionary upswing and will continue to gain richness and complexity over the next 2 or 3 years. Serve it alone as a full strength cocktail wine or pair it up with rich seafood stew imbued with a drizzle of good olive oil and a splash of dry sherry at the last moment before service for a wine and food pairing that will have your guests doing backflips!
Food Pairing:

A delicious Red from the Priorat deserves some good food to accompany it! I love to serve these bold wines with sausage because I dig the way that the brilliant red fruit and spice is balanced by the unctuous fat component in both fresh and cured sausages. So, if you’re frisky, you can throw together a big pot of sausage and peppers or you can shoot up to Whole Foods and come up with a nice assortment of sliced meats and cheeses. Heck, you could even pair it up successfully with a classic sausage and mushroom pizza.
