You ever put your nose into a glass of wine and it smells so good that you want to wear it like perfume so that your whole world can smell like that? Wilted rose petals, warm raspberry jam, kirsch liqueur, fresh cooked bacon wafting up the stairs in the morning, soft lingering Tahitian vanilla, and on and on and on… That’s a nice little preview of this week’s feature, Francis Ford Coppola’s Votre Sante Pinot Noir. We’ve never seen such a low price on this wonderful Cali Pinot and we do not expect to ever see it again. So please call or come by and snap some of these great bottles up before they’re gone. You’re going to be delighted by the quality of this Pinot Noir!
On to the Tasting Notes:
Pinot is such an interesting grape. It has certainly undergone a renaissance since that Sideways movie came out, hasn’t it? And that’s a good thing as far as I’m concerned. We all enjoy a big, rich, full bodied red from time to time. But then there are other times when we want a red that won’t weigh us down. That will, instead, leave our mouths watering and ready for more. That’s what this Coppola Pinot Noir does for me. It has such a generous and accessible style and yet it’s not the least bit wimpy or slight. It’s built for food but you can certainly serve it all by itself if you feel like having it as a cocktail instead.
I pulled the cork on a bottle of Votre Sante at the end of the day and gave it a quick check for flaws. Finding none I left my glass for about a half hour to breathe. When I returned I jumped right into writing these notes. That’s one of the nice things about this wine. It really does open right up in the glass. Some Pinots need hours of decanting to really hit their stride, but not the Votre Sante. The first thing that struck me when I took a deep sniff was just how aromatic it was. I wasn’t kidding earlier when I said that I want air fresheners that smelled like this. It was glorious. There were floral notes like rose and violet. Then there were fruity notes like warm four fruit preserves and kirsch liqueur. And there were hints of vanilla, smoke, and mushroom too. The first sip surprised me. The light color in the glass lead me to expect the wine to be light in texture but it wasn’t. Instead it was creamy and rich on the entry. It had a wealth of ripe red fruit flavors like raspberries, cherries, and pomegranate. Then it turned spicy and warm through the finish.
Like last week’s special, I don’t mean to over sell this Votre Sante Pinot. We’ve all had more intense, more age worthy, and more complex Pinots than this one. But it’s mighty darned good. It will pair up nicely with a wide range of foods and it’ll work very well as a cocktail too. I don’t think it’s a candidate for long term cellaring although it should hold up just fine for another year or two if you feel like stocking up. I would really encourage you to try to come by the shop tonight to taste it for free at our tasting bar. I think you are going to be very pleasantly surprised by the kind of quality and interest that it delivers.
Food Pairing:
I love the way that a nice spicy Pinot pairs up with a simply prepared side of salmon. Why not try one of my favorite preparations this weekend. Take a whole wild caught salmon filet and remove the skin and pin bones. Then lay it on a baking sheet and rub it with good olive oil on both sides. Hit it with some salt and pepper, a sprinkling of herbs de provence, and a dusting of honey powder. All you need to do after that is pop it under a preheated broiler for about 6 minutes. Add simple sides of roast new potatoes and sautéed green beans and you’re good to go.
